How do I create an email template (not signature) in outlook?

I've recently switched from using Lotus Notes for years to Microsoft Outlook (2003 I think). I know how to create and edit signatures, but I don't know how to create templates so that I could simply click on a template and it would include the signature and WHO I want to mail to. I've played around with the "Forms" section in outlook but it looks to crazy and complicated to do what I'm looking to do.

Create a new message as though you were going to send it to someone.



Modify it the way you want and save it as an Outlook Template. You can change the file type in the Save dialog box.
